Ülevaade
Uurimisrühma töö eesmärgiks on läbi teadus- ja rakendusuuringute ning õpetamise muuta (eestimaalaste) toitumine tervislikumaks. Analüüsitakse toidusüsteemides toimuvaid protsesse alates toormest, selle käitlemisest kuni inimese tarbimiseelistuste ja seedimiseni. Ekspertidena toiduga seotud valdkonnas aidatakse toiduettevõtetel lahendada probleeme ja arendada uusi tehnoloogiaid ja tooteid.Üheks olulisemaks suunaks on teaduspõhine toidutööstuse protsesside arendamine suurema väärtuslisandiga toodete loomiseks, k.a toidutootmise kaassaadustest. Uurimisrühm tegelebprotsessidega, mis võimaldavad parandada toodete kvaliteeti, suurendada protsessi saagiseid ning läbi selle tõsta tootmise kuluefektiivsust. Samuti uuritakse uudsete ja alternatiivsete toidutoormete kasutamist.Põhilised uurimisteemad on:• Seedetrakti mikrobioota seosed inimese toitumise, ainevahetuse ja tervisega (teema juht: Kaarel Adambeg).• Toitainete ringlus toidusüsteemides (Toomas Paalme)• Toidu sensoorne ja instrumentaalanalüüs (Kristel Vene).• Peptiidide roll pärmide lämmastikuallikana toidu fermentatsiooniprotsessides (Ildar Nisamedtinov).• Toidu kvaliteet ja struktuur (Katrin Laos).• Toidu mikrobioom: toidu kvaliteet, ohutus ja innovatsioon (Inga Sarand).• Tahke faasi fermentatsioonid ja toidu kaassaaduste väärindamine (Allan Olspert).
Tähtsamad tulemused
2023. aastal hõlmasid mikrobioomi uuringud laboratoorsete testide, mikrobioomisõbraliketoidutehnoloogiate arenduse, soolekoosluste kultiveerimise ja toitumisuuringuteni. Tehti koostööd Maaelu Teadmuskeskusega, uurides üheteravilja kasutamise võimalusi haputaina valmistamisel. Bakteriaalse viroomi katsete analüüs toimus koostöös Kopenhaageni Ülikooliga, keskendudes rasvumise, Clostridium difficile'i ja enneaegsete koliidi teemadele, eriti imikute ravivõimaluste osas.
